They show the dolphin jump in the one frame at 3:30 ish. If you watch at 3:03 there is another one out about 100 Yards and a bit to the right ahead of where he is paddling. Oh and that shark they caught is 100% a white not a mako.

I’m not sure whether they’re implanting an electronic tag under the skin or simply giving it a nick at a certain spot, but at any rate they’re basically “tagging” the shark so they can distinguish it if they catch it again.
